Often used in fine French cuisine, shallots have a delicious, delicate onion flavor excellent for sauces or vinaigrettes to serve with vegetables, meat and fish dishes. Harvest when tops die down in midsummer, about 80 days after planting. Replant smaller bulbs in fall for next season's harvest.
